Buffalo Trace Distillery has announced the release of Daniel Weller Spelt Wheat, the second installment in its experimental Daniel Weller series, a line dedicated to exploring how individual wheat varietals influence the character of wheated bourbon.

Following the debut of Emmer Wheat in 2023, the latest release turns its focus to spelt, an ancient grain rarely used in whiskey production. Known for its subtle sweetness and gentle nuttiness, spelt has long been associated with traditional European farming and artisanal baking.

Rather than relying on barrel innovation, the focus of this release was to highlight the grain itself. By replacing rye with spelt in the mashbill, the whiskey builds on Weller’s signature soft, smooth profile while allowing the wheat’s character to take center stage.

The result is a 10-year-old bourbon bottled at 94 proof that delivers a layered and distinctive experience. The nose opens with nutty, biscuit-like aromas, followed by baking spices such as clove, cinnamon, and nutmeg. Notes of fresh fruit, caramel, vanilla, and oak add depth. On the palate, dried fruit and gentle sweetness are balanced by spice and a subtle floral, tea-like quality, leading to a long, lingering finish.

The Daniel Weller series draws inspiration from Daniel Weller himself, an early Kentucky distiller whose entrepreneurial approach helped shape the foundations of wheated bourbon. Each release reflects that legacy through focused experimentation and a commitment to understanding how individual ingredients influence the final spirit.

Packaged in a 750ml bottle with a compass-inspired stopper, each edition also features a tribute to Weller’s history, with the coordinates of his Kentucky farm inscribed beneath the closure.

Daniel Weller Spelt Wheat will be available in limited quantities starting March 2026 at a suggested retail price of $549.99.

The release joins the growing Daniel Weller lineup and the broader Weller portfolio, offering enthusiasts a rare opportunity to experience how a single grain can redefine a classic bourbon profile.
